Toffee Popcorn Cupcakes

I love cooking and baking and spend hours looking for new recipes to try out. I adapted this recipe slightly by using toffee popcorn rather than sweet popcorn and a toffee sauce.

They taste amazing!



  • 175g butter
  • 175g light muscovado sugar
  • 3 eggs
  • 175g self-raising flour
  • 6 tbsp soda water
  • 100g fudge pieces

For the topping

  • 150g butter
  • 300g icing sugar
  • Toffee popcorn


Preheat the oven to 180°C and line a muffin tray with cake cases (I used edible ones!).

Cream the butter and sugar together, then add the eggs and mix well.

Fold the flour into the mixture.

Add the fudge and soda water and mix again.

Pop the mixture into the cases and cook them for 20 minutes. Create the buttercream by beating the butter and icing sugar together.

Once the buns have cooled, pipe the buttercream on top and place the popcorn in the buttercream to make super cute cupcakes.
