TANDOORI CHICKEN

Spicy, rich and lean, tandoori chicken is an easy weekday dinner or weekend lunch. Marinade the night before and then simply pop in the oven to cook. Here’s a recipe from @thelittleblogofvegan

Ingredients

Serves 4-5

  • 1 medium chicken cut
  • ½ cup of yogurt
  • 2 tbsp tandoori masala
  • 1 tsp chilli powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • Salt
  • 1 tbsp ginger and garlic paste

Method

Preheat oven to 180oC

In a bowl add yogurt and add the spices above to it and make a marinade. Cover your chicken pieces with the marinade. Leave in fridge for a few hours.

In an ovenproof dish drizzle some oil, place the chicken pieces and drizzle some oil over the top.

Cover with foil and bake in the oven for 25 mins. Remove the foil and bake for a further 20 minutes till the chicken has cooked through nicely.

Garnish with coriander, lemon and serve with chips and veggies.
