    Serves 3-4

    • 150g frozen peas
    • ½ a 400ml can of lentils, drained and rinsed
    • 75g oats
    • 75g plain flour
    • ½ a white onion, chopped
    • Handful of fresh spinach; washed and roughly chopped
    • Salt and pepper

    Method

    1. Preheat the oven to 180°C/350F. Lightly grease a baking sheet.
    2. Boil the peas, then rinse and drain.
    3. Then add the peas, lentils, oats, flour, onion, spinach and salt and pepper to a food processor and coarsely blend. Press into burger shapes and place each burger patty onto it and bake for 30 minutes, flipping halfway. Ensure they’re golden and cooked through, cooking for longer if necessary.
    4. Serve in rolls with salad and griddled asparagus on the side.
    5. I used my beloved Leisure Cuisinemaster range cooker to make this dish. I boiled the peas on the hob, griddled the asparagus on the cast iron grill that's part of the stove top and baked the burgers in one of the ovens. I've had it for years, but I still always marvel at how versatile my range cooker is. I've often had food simmering on the hobs, veg on the grill, dinner cooking in an oven and a cake baking in another.
    6. This meal is easy, green and tasty.
