Light and Healthy Father’s Day Recipes

Need something light yet filling? If your dad is looking after his waistline, watching his cholesterol or under doctor’s orders to stay healthy, there are many ways you can treat him without breaking his diet rules. Here are two of our favourite recipes, a delicious rum-glazed salmon and a classic steak - both are mouth-wateringly tasty and light enough for lunch.

Rum glazed salmon with wedges and greens

(serves 4)

This recipe gives salmon an indulgent twist with a sweet, sticky rum glaze. There aren’t too many elements to juggle, making it easy to handle in a smaller 90cm range cooker. It can also be cooked on the barbecue if the weather’s good.

Rum glazed salmon with wedges and greens

Ingredients

  • 4 salmon fillets (boneless, skin on)
  • 1 tbsp olive oil
  • 4 tbsp dark soy sauce
  • 4 tbsp maple syrup
  • 30g fresh grated ginger
  • 4 tbsp dark rum
  • 4 tsp Dijon mustard
  • 2 tbsp lime juice
  • 700g sweet potatoes (cut into wedges)
  • 2 tbsp olive oil
  • 3 sprigs fresh thyme
  • 200g tenderstem broccoli
  • 250g pak choi (trimmed and separated)
  • 1 tbsp olive oil
  • 1 garlic clove (finely sliced
  • 1 red chilli (deseeded and finely sliced)
  • 3 spring onions (finely sliced)
  • 1 lime (cut into wedges)

Method

  1. Preheat the oven to 200°C/gas 6. Place the salmon fillets into a non-metallic dish ready to be glazed. To make the glaze, mix together the dark soy sauce, maple syrup, dark rum, grated ginger, mustard and lime juice. Then pour half of this over the salmon and turn to coat fully. Cover and leave to marinate in the fridge for 15 minutes.
  2. Put the sweet potato wedges on a baking tray and drizzle with oil. Sprinkle over thyme and season with salt and pepper. Place in the oven and bake for 30-35 minutes, turning halfway through.
  3. Bring a pan to boil and add the broccoli, then cook for 3 minutes or until tender. Drain and rinse with cold water then set aside.
  4. Heat up a frying pan on medium heat and add 1 tbsp of oil before adding the marinated salmon fillets. Cook skin-side down for 3-4 minutes and turn over for 2-3 minutes or until cooked.
  5. Heat 1 tbsp of oil in a wok or large pan. Add the pak choi leaves with a splash of water and stir-fry over a high heat for 1 minute. Add the garlic, chilli and broccoli and cook for another 2 minutes.
  6. For the remaining glaze, add it to a pan and allow to bubble over on a high heat for 1-2 minutes. Plate up the salmon, wedges and greens then drizzle over the hot glaze to finish.

Beef and Guinness pie topped with mash

Ingredients

  • 500g beef (diced)
  • 450G potatoes
  • 75ml milk
  • 1 tbsp butter
  • 3 tbsp flour
  • 2tsp brown sugar
  • 600ml Guinness
  • 2 onions
  • 2 cloves of garlic
  • 2 carrots
  • 3 celery stalks
  • 2 bay leaves
  • ½ a bunch of fresh thyme
  • Olive oil

Method

  1. Peel and roughly chop the onions, garlic, carrots and celery. Using some string, tie the thyme sprigs and bay leaves together. Heat oil in a large casserole pan and add the vegetables and tied herbs. Toss everything in the oil to coat and then add seasoning. Cover and cook the veg for about 10 minutes or until softened. Transfer to a plate and set aside, hanging onto the pan.
  2. Toss the beef pieces in flour, season, and add to the pan. Cook until browned all over (do this in batches if cooking for large groups). Add in the Guinness to deglaze the pan, add the veg and herbs, and top with water to cover. Stir in the brown sugar, bring to boil then cover and allow to simmer on a low heat for 2 hours.
  3. Cook the potatoes in a large pan of salted water, then drain and mash together with butter and milk. Season and keep mashing until smooth.
  4. Preheat the oven to 200ºC/gas 6. Meanwhile, put the meat and vegetables into an ovenproof dish, top with mash and drizzle with some oil. Bake for 20 minutes or until golden on the top.
