    I make it no secret that I do not like avocados, but when a friend left a couple in my fridge, I thought it a good opportunity to experiment. How better to do this than with cake?.

    Ingredients

    Serves 4-6

    • 1 medium-sized ripe avocado
    • 150g coconut palm sugar
    • 170g plain flour
    • 50g good quality cocoa or cacao powder
    • ½ tsp bicarbonate of soda
    • 1 tsp baking powder
    • 200ml coconut milk
    • 80ml coconut oil (plus extra for greasing)
    • 1 tsp vanilla extract

    Method

    1. Preheat the oven to 180°C.
    2. Using the extra coconut oil, grease and line a loaf tin.
    3. Mash the avocado and beat together with the sugar until smooth.
    4. Add all the remaining ingredients to a food processor or mixer and blitz until a silky smooth batter is formed.
    5. Pour the batter into the prepared tin and bake for 40- 45 minutes, or until an inserted knife comes out clean.
    6. Leave the cake to cool in the tin for 5 minutes, then transfer onto a wire rack to cool completely. Serve with juice, coffee or your favourite tea and enjoy!
